This food is based on the rustic cooking and recipes of dishes enjoyed by colonial Spanish settlers, American Cowboys, Native Americans, and even the people of Mexico to the south. Known for its diversity and spices, specifically chile, whether red or green, Cowboy offers a fusion of these chiles, specifically from Hatch, with traditional “Americana” dishes.
