Legendary Santa Fe Chef “Johnny V” was instrumental in developing Cowboy’s authentic Southwestern Cuisine, and his contribution to Cowboy Cantina has been vital to its success. Johnny’s love for the Santa Fe style cuisine is apparent in Cowboy’s dishes and his Chicken Fried Pork Chop is something everyone should be so lucky to try! We’re so thankful that Johnny Vee helped put together one of the most delicious menu’s in the Coachella Valley!

Jim Valdez, owner of Cowboy Cantina, wanted to create a concept that reflected his passion for the flavor and spices he grew up eating in Colorado, which was heavily influenced by his neighbors to the west, in New Mexico. Jim’s earliest memories are infused with the aromas of Santa Fe-style Mexican cuisine, which he savored from a young age, specifically hatch green chilies, earthy ancho peppers, and the vibrant spices of Chamayo.

With boundless enthusiasm and a clear vision his goal was to craft a value dining experience that transcends the ordinary, offering not just exceptional food but also a vibrant atmosphere where everyone feels at home. At Cowboy Cantina, Jim’s commitment to quality is evident in every dish.
